 Vinegar Fish.

 This is a recipe from the west coast of India, serve with a lentil dish, and chapatis.

Ingredients.

1 teaspoon of turmeric.

1 teaspoon of salt.

450g / 1 lb of cod or haddock steaks.

3 tablespoons of oil.

2 onions sliced.

2 to 3 green chillies thinly sliced.

2 garlic cloves.

2.5cm / 1 inch of ginger root peeled and cut into thin strips.

2 tablespoons of white wine vinegar.

4 tablespoons of water.

Fresh coriander leaves to garnish.

Method.

1. Mix the turmeric and salt together on a plate. Coat the fish in the mixture.

2. Heat the oil in a pan and fry the fish gently on both sides for 1 to 2 minutes, lift out the fish and set aside.

3. Add the onions, chillies, garlic and ginger to the pan and fry, stirring until golden.

 4. Stir in the vinegar and water, put back the fish, cover and cook gently for 5 to 6 minutes until cooked through.

5. Transfer to a warm serving dish, garnish with the coriander and serve.

Serves 4.
