Vegetable Rice


 Vegetable Rice.

Ingredients.

2 tablespoons of oil.

2 leeks, washed and sliced.

1cm / 1/2 an inch of ginger root, peeled and finely chopped.

1 garlic clove thinly sliced.

225g / 8oz of long grain rice.

Salt.

225g / 8oz of spring greens, finely shredded.

Method.

1. Heat the oil in a wok or deep frying pan.

2. Add the leeks, ginger and garlic and fry for 30 seconds.

3. Add the rice, stirring to coat each grain with the oil mixture.

4. Add sufficient boiling water to just cover the rice, season with salt to taste.

5. Bring to the boil, cover and simmer for 5 minutes.

6. Add the spring greens, bring back to the boil and simmer for 7 to 9 minutes until the rice is tender.

Drain and serve.

Serves 4 to 6.
