Thai Tomato and Green bean Salad.


 Tomato and Green bean Salad.(with dressing recipe.)

Ingredients.

3 tomatoes.

100g / 4oz of green beans.

4 tablespoons of chopped coriander leaves.

1 tablespoon of chopped fresh basil.

2 tablespoons of chopped unsalted roasted peanuts.

Preparation method.

1. Cut the tomatoes into small cubes and place in a bowl.

2. Cut the beans in half, then slice the halves into thin strips.

3. Add the chopped herbs and peanuts and mix well.

Ingredients for the dressing.

1 fresh red chilli, deseeded and finely chopped.

3 tablespoons of lemon juice.

2 tablespoons of sugar.

3 tablespoons of fish sauce.

1 garlic clove, minced.

Method.

1. Put the chilli, sugar, fish sauce, and garlic into a bowl and mix well. Mash the sugar with the back of a spoon to help dissolve.

2. Pour the dressing over the salad and toss well.

Serves 4 to 6.
