Each of these recipes will give you enough Thai curry paste to make one curry which will serve four. It is best to make your Thai curry paste fresh each time, this not only gives the curry a better colour but also a fresher taste.
- Thai Green Curry Paste.
Makes enough Thai green curry paste for one curry.
Ingredients.
2 tablespoons of sunflower oil.
2 tablespoons of chopped green bell pepper.
1 to 7 green cayenne chillies. ( depending on how hot you like your curry, add more if you like ).
3 cm of ginger root or galangal, chopped.
60g ( 2 1/2 oz ) of spring onion leaves.
2 cloves of garlic halved.
1/2 a teaspoon of ground coriander.
1/2 a teaspoon of ground cumin.
1 tablespoon of fresh finely chopped coriander leaf.
1 teaspoon of very finely chopped lemon grass.
1/2 a teaspoon of shrimp paste.
1 teaspoon of fish sauce.
Method.
Put all ingredients into a blender and add just enough water to blend to a thick paste. If you dont have a blender you can use a pestle and mortar.
Thai Orange Curry Paste.
Ingredients.
2 tablespoons of sunflower oil.
3 tablespoons of chopped orange bell pepper.
1 to 7 orange Thai chillies.
3 cm of chopped ginger root or galangal.
60g of chopped carrot.
1/3 of a teaspoon of ground turmeric.
1/2 a teaspoon of ground coriander.
1/2 a teaspoon of ground cumin.
1 tablespoon of fresh chopped coriander leaves.
1 teaspoon of very finely chopped lemon grass.
1 teaspoon of shrimp paste.
1 teaspoon of fish sauce.
Method.
Put all the ingredients in a blender with just enough water to make a thick paste.
These Thai curry pastes can be used with Fish, Vegetables, or Meat.
Thai Red curry paste.
2 tablespoons of sunflower oil.
2 tablespoons of chopped red bell pepper.
1 to 7 red cayenne chillies. ( if you like your curry hotter add more. )
3 cm of ginger root or galangal, chopped.
60g of carrot , chopped.
2 teaspoons of paprika.
1/2 a teaspoon of ground coriander.
1/2 a teaspoon of ground cumin.
2 tablespoons of chopped purple basil, if available.
1 shredded lime leaf.
1 teaspoon of very finely chopped lemon grass.
1/2 a teaspoon of shrimp paste.
1 teaspoon of fish sauce.

Put all the ingredients into a blender with just enough water to form a thick paste. If you dont have a blender you can use a pestle and mortar.
