Sour Soy Sauce.(Nam Jim Siiyu.)

Simple to make and very good with crispy snacks.

This sauce will keep indefinitely if bottled properly, if you like it you can make up a large batch.

Ingredients.

60 ml / 2 floz of dark soy sauce.

80 ml / 3 floz of rice vinegar.

1 tablespoon of palm or brown sugar.

1 teaspoon of salt.

Method.

Mix all the ingredients together and pour into a sterilized jar or bottle with vinegar proof lid.

 Makes 150 ml / 1/4 of a pint.
