 Thai Fried Red Pork Curry and Beans.

Ingredients.

175 g /6 oz of french or runner beans, cut into 2.5 cm / 1 inch lengths.

2 tablespoons of vegetable oil.

300 g / 10 oz of pork fillet, thinly sliced.

2 tablespoons of Thai red curry paste.

1 tablespoon of fish sauce.

1 tablespoon of brown sugar.

Method.

1.Place the beans in a medium saucepan, add water to cover and bring to the boil. Cook for 5 minutes then drain and set aside.

2. Heat the oil in a wok or heavy based frying pan, add the pork and stir fry for 6 to 8 minutes or until the pork is cooked,transfer the pork to a plate and set aside.

3. Add the curry paste to the oil remaining in the pan, stir fry for 3 minutes,then return the pork to the pan together with the fish sauce, sugar and cooked beans.  Stir fry for 10 minutes.

Serve with boiled rice.

Serves 4.
