Thai Red Beef Curry.
Ingredients.
3 tablespoons of vegetable oil.
3 tablespoons of Thai red curry paste.
1/2 a teaspoon of ground coriander.
1/2 a teaspoon of ground cumin.
4 kaffir lime leaves, shredded.
500 g / 1 lb of fillet of beef, cut into thin strips.
400 ml / 14 floz of coconut milk.
2 tablespoons of crunchy peanut butter.
2 teaspoons of fish sauce.
1 tablespoon of soft brown sugar.
Method.
1. Heat the oil in a heavy based saucepan and add the red curry paste, ground coriander, ground cumin and the lime leaves, cook over a gentle heat stirring frequently for 3 minutes.
2. Add the beef strips to the pan, stir to coat the meat evenly with the spices and cook gently stirring frequently for 5 minutes.
3. Add half the coconut milk to the pan and stir well to combine and simmer for 4 minutes until most of the coconut milk has been absorbed.
4. Stir in the rest of the coconut milk with the peanut butter, fish sauce and sugar and simmer gently for 5 minutes until the sauce is thick and the beef is tender.
Serve immediately with rice.
