Thai Pork Satay.


Pork Satay.(You can use chicken if you prefer.)

Ingredients.

225g / 8oz of pork fillet or loin, cut into 8 strips.

4 tablespoons of soy sauce.

4 tablespoons of oyster sauce.

2 tablespoons of fresh chopped coriander.

2 cloves of garlic, crushed.

2 tablespoons of brown sugar.

To make the marinade.

1. Put the soy sauce in a large bowl along with the oyster sauce, coriander, garlic and sugar, mix well.

2. Add the pork mix well with the marinade and marinate for at least one hour.

3. When marinated thread each slice of pork onto a skewer, (soak each skewer in water for 10 minutes ) place on a tray ready for grilling.

Ingredients for the chilli dipping sauce.

1 shallot, finely chopped.

4 tablespoons of fish sauce.

Juice of 1 1/2 limes.

1 red chilli, deseeded and finely chopped.

1 tablespoon of sesame oil.

1 teaspoon of brown sugar.

To make the chilli sauce.

Put the chopped shallot in a bowl with the fish sauce, lime juice, sugar, chilli and sesame oil, mix well.

Grill the pork on a high heat, for 3 minutes on the first side, turn and grill for 1 1/2 to 2 minutes.

Serve with the dipping sauce.
