Pickled Lime. (Manau Dong.)

This tart pickle is easy to make, lasts indefinitely and is delicious.

Ingredients.

12 limes.

300 ml / 1/2 a pint of rice wine.

300 ml 1/2 a pint of rice vinegar.

400 ml / 13 floz of water.

1 tablespoon of salt.

1 tablespoon of sugar.

Method.

1. Bring the rice wine, water and vinegar to simmering point in a large pan, add the limes and the salt and sugar. Turn off the heat.

2. When cooled, put the limes into suitable sterilized jars, topping up with the vinegar water. Make sure the jars have vinegar proof lids.

3. Leave to mature for a month or two, then use as required.
