Thai Pickled Cucumber Salad.


Pickled Cucumber Salad.

Great with crispy snacks like fried corn cakes. 

Ingredients.

1/2 a cucumber, peeled and thinly sliced.

2 shallots, peeled and thinly sliced.

4 tablespoons of water.

2 tablespoons of white sugar.

3/4 of a teaspoon of salt.

1 red chilli, deseeded and thinly sliced.

1 tablespoon of vinegar.

Method.

1. Dissolve the sugar and salt in the water and vinegar.

2. Put the cucumber, chillies and shallots in a bowl, cover with the vinegar solution, mix cover and put in the fridge for 3 hours before serving.
