Satay Peanut Dipping Sauce.(Nam Jim Satay.)
This sauce goes with pork or chicken satay, but is equally good with other starters or snacks.
This recipe makes about 160g / 6oz of sauce.
Ingredients.
4 tablespoons of vegetable oil.
6 tablespoons of smooth peanut butter.
4 tablespoons of thick coconut milk.
2 teaspoons of soy sauce.
1 teaspoon of fish sauce.
1 teaspoon of chilli sauce,(Shop bought , or see recipe.)
1/2 a teaspoon of ground black pepper.
Method .
1. mix all the ingredients except the oil together in a bowl.
2. Heat the oil in a wok or frying pan, pour the ingredients into the pan and briskly stir fry for a couple of minutes. Adding just enough water if needed to keep it thick but pourable.
Serve hot or cold.
