Coconut Salad Dressing.

Ingredients.

150 ml / 1/4 of a pint of thin coconut milk.

50 ml / 2 floz of rice vinegar.

2 to 4 tablespoons of chilli jam.(see sauce recipes.)

1 teaspoon of ground white pepper.

2 tablespoons of fresh lime juice.

2 teaspoons of fish sauce.

1 teaspoon of brown sugar.

Method.

Simply mix all the ingredients together, chill and serve.
