Chilli Jam.(Nam Prig Pad.)

A very tasty chilli syrup.

Ingredients.

6 to 12 fresh red cayenne peppers.

225g /8oz of castor sugar.

1/2 a teaspoon of shrimp paste.

1 teaspoon of fish sauce.

2 teaspoons of salt.

Method.

1. Put the chillies in a blender and work down as fine as you can using just a little water to help.

2. Boil 300ml / 10 floz of water, add the sugar and the blended chilli and simmer until you get a thickish paste.

3. Add the salt, mix well and allow to cool , it should be pourable when cold, if not add a little water and mix in.

pour into sterilized bottles.

Makes about 350 ml / 12 floz.
