Asparagus Salad.
Ingredients.
350g / 12 oz after trimming stalks.
3 tablespoons of sunflower or vegetable oil.
2.5cm /1 inch piece of ginger, grated.
1 or 2 red cayenne chillies, deseeded and chopped.
1 teaspoon of sesame seeds.
1 teaspoon of fish sauce.
1 teaspoon of sweet soy sauce.
Method.
1. Wash the asparagus and steam for a couple of minutes to soften.
2. Heat the oil in a wok or frying pan and stir fry the ginger, chillies and sesame seeds for about one minute.
3. Add the asparagus and stir fry for a further 2 to 3 minutes.
4. When cold, add the fish and soy sauces, garnish with coriander and lime wedges and serve with some chilli jam.
Serves 4.
