Stuffed Aubergines.
Ingredients.
8 small aubergines.
2 tablespoons of ground coriander.
1 tablespoon of ground cumin.
1 teaspoon of garam masala.
2 teaspoons of mango powder.
Salt.
Chilli powder.
2 to 3 tablespoons of oil.
2 small onions quartered.
Method.
1. Slit the aubergines lengthways into 4 sections, held together at the stalk end.
2. Mix all the ground spices and mango powder together with salt and chilli powder to taste and carefully some of the mixture into each of the aubergines, pressing the sections back together.
3. Heat the oil in a large frying pan, add the aubergines and onion quarters and fry over a gentle heat, turning carefully once or twice until tender. Serve hot or cold.
Serves 4.
