Spicy Fried Corn Cakes.

Ingredients.

1 cup of tinned sweet corn,drained.

1 tablespoon of red curry paste.

1/4 of a cup of flour.

1 egg.

1/2 a teaspoon of white sugar.

2 lime leaves, sliced very thinly then chopped.

oil for frying.

Method.

1. Put the corn, flour, egg, curry paste, sugar and lime leaves in a bowl and mix well.

2.put oil about 1/2 an inch deep into a wok or frying pan and heat.

3. Drop rounded spoonfuls of the corn mixture into the hot oil and press down to form a patty shape, cook on a medium heat turning once, till golden brown.

4. drain on kitchen paper.

Serve with pickled cucumber salad.

Also a good side dish for coconut milk based curries.

Makes 4 to 6.
