Saffron Rice.

Ingredients.

175g / 6oz of ghee.

2 large onions, sliced.

350g / 12oz of Basmati rice.

1 teaspoon of cloves.

4 cardamoms.

1 teaspoon of salt.

1 teaspoon of freshly ground black pepper.

1/2 a teaspoon of saffron strands, soaked in 1 tablespoon of boiling water for 30 minutes.

750ml / 1 1/4 pints of boiling water.

Method.

1. Melt the ghee in a large saucepan, add the onions and fry gently for 4 to 5 minutes until soft.

2. Wash the rice thoroughly, then drain. Add to the pan with the spices, salt and pepper, then fry for 3 minutes, stirring frequently.

3. Add the saffron with its liquid and stir well to mix.

4. Add the water, bring to the boil, lower the heat and simmer for 15 to 20 minutes until cooked.

5.Transfer to a warm serving dish, garnish and serve hot.

Serves 4.
