Beef Rhogan Josh.

Rhogan Josh is one of the best known curries.

The title means red curry, the red being provided by the chillies.

Ingredients.

2 tablespoons of ghee.

1 kg / 2 lb of braising steak, cut into 2.5 cm / 1 inch cubes.

1 onion chopped finely.

3 garlic cloves.

2.5 cm / 1 inch piece of ginger root peeled and grated.

4 fresh red chillies, chopped.

4 green cardamom pods.

4 cloves.

2 teaspoons of coriander seeds.

2 teaspoons of cumin seeds.

1 teaspoon of paprika.

1 teaspoon of salt.

1 dried bay leaf.

120 ml / 4 floz of natural yoghurt.

2.5 cm /1 inch piece of cinnamon stick.

150 ml / 1/4 of a pint of hot water.

1/2 teaspoon of garam masala.

Method.

1. Heat the ghee in a large flameproof casserole and brown the meat in batches. Set aside in a bowl.

2. Add the onion to the ghee and stir over a high heat for 2 to 3 minutes.

3. Grind together the garlic,ginger, chillies, cardamom, cloves, coriander, cumin, paprika and salt.

4. Add the spice paste and bay leaf to the casserole and stir until fragrant.

5. Return the meat and any juices in the bowl to the casserole and simmer for 2 to 3 minutes.

6. Gradually stir the yoghurt into the casserole so that the sauce keeps simmering.

7. Stir in the cinnamon and hot water and pepper to taste.

8. Cover and cook in a preheated oven at 180 c / 350f for 1 1/4 hours stirring frequently until the meat is tender and the sauce is reduced.

9. Discard the cinnamon stick and stir in the garam masala. and serve.

Serves 6.
