 Plain Fried Rice.

Ingredients.

75g / 3oz of ghee or butter.

1 small onion, chopped.

2 cups of Basmati rice, rinsed and drained.

1 teaspoon of salt.

4 cups of water.

Method.

1. Melt the ghee or butter in a large pan, add the onion and fry until golden. 

2. Add the rice and salt and fry for about 1 minute.

3. Add the water, cover and bring to the boil. Reduce the heat and gently stir the rice a few times cover and cook on a very low heat for 10 to 15 minutes until the water is fully absorbed and the rice is cooked.Do not stir during cooking.

If the rice is not cooked by the time the water has been absorbed, add 1 tablespoon of warm water and continue cooking without stirring, until the rice is tender.

Serves 4 to 6.
