Plain Boiled Rice.

Ingredients.

350g / 12oz of long grain rice.

3/4 of a pint of water

Salt.

Method.

1. Wash the rice thoroughly under cold running water, then soak in cold water for 30 minutes, then drain.

2. Place the rice in a pan with 3/4 of a pint of water and salt to taste, bring to the boil, cover and simmer very gently for 20 to 25 minutes, until the rice is tender and the liquid is absorbed.

If cooking on an electric hob, the heat can be turned off once the rice has come to the boil.

Serves 4.

A quick and easy way to colour and flavour rice is to add 1/4 of a teaspoon of turmeric for each 1/2 cup of rice, adding it to the water while cooking.
