Pilau Rice


Pilau Rice.

Ingredients.


225g / 8oz of long grain rice.

3 tablespoons of oil.

5cm / 2 inch piece of cinnamon stick.

4 cardamom seeds.

4 cloves.

1 onion, sliced.

600ml / 1 pint of beef stock, or water.

Salt.

For the garnish.

Lime or lemon slices,dill or fennel sprigs.

Method.

1. Wash the rice thoroughly under cold running water, then soak in cold water for 30 minutes, then drain.

2. Heat the oil in a pan, add the cinnamon, cardamoms and cloves and fry for a few seconds.

3. Add the onion and fry until golden.

4. Add the rice and fry, stirring occasionally, for 5 minutes.

5. Add the stock or water and salt to taste. Bring to the boil, then simmer, uncovered, for 10 minutes, until the rice is tender and the liquid is absorbed.

Transfer to a warm serving dish and garnish with the lime or lemon slices and herb sprigs.

Serves 4.

Use this recipe to make vegetable pilau.

Add 100g / 4oz each of peas, sliced carrots and cauliflower florets after frying the onion. Fry for 5 minutes, then add the rice.
