Palak Aloo.
Ingredients.
40g / 1 1/2oz of ghee or butter.
225g / 8oz of potatoes, peeled and cut into chunks.
2 teaspoons of garlic paste.
1 green chilli halved and deseeded.
2 teaspoons of ginger paste.
450g / 1 lb of spinach roughly chopped.
1 tablespoon of fresh chopped coriander leaves.
Salt.
50g / 2oz of melted butter for serving.
Method.
1. Heat the ghee or butter in a pan and fry the potatoes for 4 to 5 minutes.
2. Add the garlic and ginger pastes and the chilli, fry for 1 or 2 minutes.
3. Stir in the spinach, coriander and salt to taste, add a little water and continue frying for 10 to 15 minutes until the potatoes are tender and the spinach is dry.
Serve hot with the melted butter poured over the top.
Serves 4.
