Pakora.
These spicy nibbles, from northern India, can be served as a starter or as a snack with drinks.
Ingredients.
150g /5oz of gram flour / bessan.
1/2 a teaspoon of chilli powder.
1/2 a teaspoon of salt.
150ml / 1/4 of a pint of natural yoghurt.
1 teaspoon of lemon juice.
Oil for deep frying.
For the filling.
About 350g / 12oz of chopped mixed vegetables (cauliflower florets, cubed aubergine, sliced green peppers and sliced courgettes for example. )
Method.
1. Sift the flour, salt and chilli powder into a bowl.
2. Gradually stir in the yoghurt and lemon juice.
3. Cover and leave in a cool place for 2 hours until the batter is thick , it should be much thicker than pancake batter.
4. Dip the vegetables in the batter to coat, then deep fry until golden. Drain on kitchen paper,serve while warm and fresh with a chilli dip or cucumber raita, or chutney of your choice.
