Masala Fried Fish.
Ingredients.
8 Plaice or other white fish fillets, skinned, about 125 to 150g /4 to 5oz each.
1 tablespoon of ground turmeric.
2 tablespoons of plain flour.
1/2 a teaspoon of ground black peppercorns.
1 teaspoon of chilli powder.
1 tablespoon of ground coriander seeds.
1 garlic clove, crushed.
2 teaspoons of garam masala.
Oil for deep frying.
To garnish, chilli powder and lemon wedges.
Method.
1. In a shallow dish, combine the turmeric, flour, salt, black pepper, chilli powder, coriander, garlic and garam masala and mix well.
2. Fill a shallow saucepan or a deep frying pan with oil to a depth of 5 to 7cm /2 to 3 inches, and heat to 180c /350f or until a cube of bread browns in 30 seconds.
3. Turn the fish fillets in the spice mix until well coated.
4. Deep fry the fish fillets for about 3 to 5 minutes, turning often. Drain on kitchen paper.
5. Serve sprinkled with chilli powder and garnished with lemon wedges and accompanied by a selection of pickles and chutneys.
Serves 4 to 8.
