Lamb Bhuna.

Ingredients.

1 onion, chopped.

2 garlic cloves, chopped.

3 tomatoes, peeled and chopped.

1 teaspoon of malt vinegar.

1 tablespoon of oil.

750 g /1 1/2 lbs of lean boneless lamb, cut into 4 cm 1 1/2 inch cubes.

2 teaspoons of ground coriander.

1 teaspoon of ground cumin.

2 dried red chillies chopped.

3 fresh green chillies, chopped.

1/2 a teaspoon of ground turmeric.

30 g/ 1 oz of creamed coconut.

50 ml / 2 floz of water.

1 teaspoon of garam masala.

Salt and pepper.

Fresh coriander leaves to garnish.

Method.

1. Puree the onion, garlic, tomatoes and vinegar in a food processor or blender,Alternatively, chop the vegetables,finely by hand and mix with the vinegar. Set aside.

2. Heat the oil in a large frying pan and brown the meat for 5 to 10 minutes, remove and set aside.

3. Reduce the heat and add the ground coriander,cumin, chillies and turmeric to the pan and stir continuously till the spices are fragrant.

4. Increase the heat again and add the onion mixture, stir fry for 5 minutes until nearly dry.

5. Return the meat to the pan. combine the coconut and water and add to the pan. Simmer for 45 to 60 minutes until the meat is tender, stir in the garam masala and season to taste.

6. Serve garnished with fresh coriander leaves.

Serves 4 to 6.
