Hot Relish.
Ingredients.
20 red chillies, deseeded and chopped.
10 shallots or 1 large onion, chopped.
2 garlic cloves, chopped.
5 macadamia nuts.
1 teaspoon of dried shrimp paste.
2 tablespoons of vegetable oil.
1 teaspoon of grated ginger root.
1 teaspoon of brown sugar.
3 tablespoons of tamarind water.
Salt.
150ml / 1/4 of a pint of thick coconut milk or cream.
Method.
1. Put the chillies, shallots or onion, macadamia nuts and shrimp paste into a liquidizer and work to a very smooth paste.
2. Heat the oil in a pan, add the paste and fry for 2 minutes.
3. Add the ginger, sugar, tamarind water and salt to taste, stir well then add the coconut milk or cream.
4. Simmer for about 15 minutes until the mixture is thick and oily, stirring occasionally.
5. Increase the heat and stir fry for a further 2 to 3 minutes.
Serve hot or cold.
