 Goan Meat Curry.

Ingredients.

50g /2 0z of ghee or 4 tablespoons of oil.

1 onion, chopped.

5 cloves of garlic, chopped. 450g / 1 lb of lean beef or lamb, cubed.

5 cloves of garlic, ground to a paste.

25g / 1 oz of root ginger, peeled and ground to a paste.

3 green chillies, deseeded and very finely chopped.

1/2 a teaspoon of ground turmeric.

2 teaspoons of aniseed powder.

Salt.

40g /1 1/2 oz  of creamed coconut.

About 250 ml /8 floz of water.

2 or 3 sprigs of fresh chopped coriander leaves.

Method.

1.Heat the ghee or oil in a large pan, add the onion and chopped garlic and fry until lightly browned.

2. Add the meat, garlic and ginger pastes, chillies and turmeric and mix well.

3. fry for 6 to 7 minutes until the meat is dry. Sprinkle with the aniseed powder, add salt to taste, then stir in the creamed coconut.

4. Fry for 1 or 2 minutes. Add the water and coriander leaves, cover and cook gently for 30 to 40 minutes until the meat is tender.

Serves 4 to 6.
