Fish Molee.
Ingredients.
675g / 1 1/2 lbs of cod fillet, skinned and cut into four pieces.
2 tablespoons of plain flour.
4 tablespoons of oil.
2 onions, sliced.
2 garlic cloves, crushed.
1 teaspoon of turmeric.
4 green chillies, finely chopped.
2 tablespoons of lemon juice.
175ml / 6floz of coconut milk.
Salt.
Method.
1. Coat the fish with the flour. Heat the oil in a frying pan, add the fish and fry quickly on both sides. Remove with a slotted spoon and set aside.
2. Add the onion and garlic to the pan and fry until soft and golden. Add the turmeric, chillies, lemon juice, coconut milk and salt to taste. Simmer uncovered for 10 minutes or until thickened.
3. Add the fish and any juices, spoon over the sauce and cook gently for 2 to 3 minutes, until tender.
Garnish with sliced chillies and chives.
Serves 4.
