Dosas.
You can serve dosas as plain pancakes or filled with a stuffing, you can experiment with different fillings, such as one of the spiced rice recipes.
Ingredients.
225g /8oz of dhal (dried pulses or lentils.)
50g /2oz of long grained rice.
600ml /1 pint of water.
1/2 a teaspoon of bicarbonate of soda.
1 teaspoon of chilli powder.
1/2 a teaspoon of salt.
Vegetable oil for shallow frying.
Method.
1. Wash the dhal and rice thoroughly, then put in a bowl with the water and leave to soak overnight.
2. Place the dhal rice and water in a blender and work until smooth. Add the bicarbonate of soda, chilli powder and salt and stir well.
3. Pour in enough batter to cover the bottom of a cold heavy based pan. Put on the heat until the batter starts to set. Pour about 1 tablespoon of oil around the edge of the dosa, then shake the pan to spread the oil.
4. Fry the dosa for about 1 minute, until golden underneath. Remove from the pan add the filling then roll up, repeat with the remaining batter. serve hot.
Makes 12 to 15.
