Dhai Bhindi.
Ingredients.
225g / 8oz of okra.
2 tablespoons of oil.
2.5cm / 1 inch piece of ginger root, peeled and chopped.
1 teaspoon of turmeric.
Salt.
2 to 3 tablespoons of water.
300ml / 1/2 a pint of natural yoghurt.
1/2 a teaspoon of chilli powder.
2 tablespoons of grated fresh coconut.
1 tablespoon of finely chopped fresh coriander leaves.
Method.
1. Cut the tops off the okra and halve lengthways.
2. Heat the oil in a pan, add the okra and fry for 5 minutes.
3. Add the ginger, turmeric and salt to taste stir well.
4. Add the water, cover and cook for 10 minutes until the okra is tender.
5. Mix the remaining ingredients together, add to the pan stir well and serve.
Serves 4.
