Cucumber Raita.

Ingredients.

 2 teaspoons of fresh mint leaves.

  100g / 4oz of cucumber deseeded and diced.

 300g / 10 oz of natural yoghurt.

Salt and pepper

Grated nutmeg to serve.

Method.

 

1. Chop the fresh mint finely.

2. Peel the cucumber, deseed it and dice.

3. Combine the yoghurt, mint and cucumber, season to taste.

4. Turn into a serving dish, sprinkle with grated nutmeg and serve.
