Coconut Rice.
Ingredients.
350g / 12oz of Basmati rice.
450ml / 3/4 of a pint of coconut milk.
1/2 a teaspoon of turmeric.
8 shallots, coarsely chopped.
20 peppercorns.
1 teaspoon of salt.
Method.
1.Wash the rice thoroughly, under cold running water, then soak for 30 minutes, then drain.
2. Put the coconut milk in a pan, stir in the turmeric, then add the rice. Bring to the boil, then cover and simmer gently for about 10 minutes.
3. Add the shallots, peppercorns and salt and continue cooking gently for another 10 minutes or until the rice is tender. Be careful not to let the rice burn.
Transfer to a warm serving dish and serve at once.
Serves 4.
