 Chicken Molee.

Ingredients.

3 tablespoons of oil.

4 chicken breasts, skinned and diced.

6 cardamom pods.

6 cloves.

5cm / 2 inch piece of cinnamon stick.

1 large onion, sliced.

2 garlic cloves, peeled.

4cm / 1 1/2 inch piece of ginger root, peeled and chopped.

3 green chillies deseeded.

juice of 1 lemon.

1 teaspoon of turmeric.

50g / 2oz of creamed coconut.

150ml /1/4 of a pint of hot water.

Salt.

Method.

1. Heat the oil in a pan, add the chicken and fry quickly on all sides till browned. Remove from the pan and set aside.

2. Add the cardamoms, cloves and cinnamon and fry for one minute, add the onion and fry till soft.

3. Puree the garlic, ginger, chillies and lemon juice in a blender, add to the pan with the turmeric and cook for 5 minutes.

4. Melt the coconut in the hot water and add to the pan with salt to taste. Simmer for 2 minutes, then add the chicken pieces and any juices, simmer for 15 to 20 minutes, until tender.

Serves 4.
