Chicken Matsaman Curry.
Matsaman is a corruption of the word Moslem, and reflects the northern Indian influence on this curry from Thailand.
Ingredients.
3 tablespoons of vegetable oil.
4 chicken legs. skinned.
350 ml / 12 floz of coconut milk.
1 1/2 tablespoons of Matsaman(Muslim) curry paste.
4 new potatoes, scrubbed or peeled.
1 onion, quartered.
1/2 a teaspoon of lemon juice.
1 1/2 tablespoons of fish sauce.
1/2 a tablespoon of sugar.
25 g / 1 oz of roasted peanuts.
Method.
1. Heat the oil in a large saucepan. Add the chicken and brown on all sides. Stir the coconut milk into the pan and bring it to the boil. Add the curry paste, stir well, lower the heat and simmer for 2 hours.
2. Stir in the potatoes, onion, lemon juice, fish sauce, sugar and peanuts. Cover the pan and simmer for 20 minutes more. Serve immediately.
Serves 4.
