Chicken Madras.

Ingredients.

 675g / 1 1/2 lbs of chicken breast.

3 tablespoons of vegetable oil.

2 medium onions peeled chopped and pureed in a blender. 

 2 tablespoon of tomato paste.

400g / 14oz of tinned tomatoes.

1 tablespoon of ground almonds.

4 fresh or dried red chillies.

2 tablespoons of fresh lemon juice.

1 teaspoon of white sugar.

1 teaspoon of chilli powder.

1 teaspoon of ground cumin.

1 teaspoon of ground coriander.

1 teaspoon of turmeric powder.

1 teaspoon of paprika.

1 teaspoon of ground ginger.

3 garlic cloves, crushed.

1 teaspoon of garam masala.

Method.

1. Heat the oil in heavy based frying pan, add the onion and garlic and fry until soft and golden.

2. mix all the spices except the garam masala, together with a little water to make a paste, add the spice paste to the pan and cook stirring constantly for 5 to 6 minutes.

3. Add the chicken and cook, stirring till evenly browned.

4. Add the tomatoes, tomato paste and chillies, mix well and bring to the boil, reduce the heat and add the ground almonds and lemon juice and sugar and simmer for 20 to 25 minutes until the chicken is tender and the sauce has thickened.

5. Stir in the garam masala just before serving.

Serves 4.
