Chicken Jalfrezi.

Ingredients.

1 teaspoon of mustard oil.

3 tablespoons of vegetable oil.

1 large onion, chopped finely.

3 garlic cloves, peeled and crushed.

1 tablespoon of tomato puree / paste.

2 tomatoes, peeled and chopped.

1 teaspoon of ground turmeric.

1/2 a teaspoon of ground cumin.

1/2 a teaspoon of ground coriander.

1/2 a teaspoon of chilli powder.

1/2 a teaspoon of garam masala.

1 teaspoon of red wine vinegar.

1 small red bell pepper / capsicum, chopped.

750g / 1 1/2 lb of chicken breast cut into bite sized pieces.

1/2 a teaspoon of salt.

Fresh coriander to garnish.

Method.

1. heat the mustard oil in a large frying pan set over a high heat for about 1 minute until it begins to smoke. Add the vegetable oil, reduce the heat, add the chicken and fry till evenly browned. remove from the pan and set aside. Then add the onion and the garlic and fry until golden.

2. Add the tomato puree, chopped tomatoes, turmeric, ground cumin, ground coriander, chilli powder, garam masala and vinegar to the frying pan,  stirring until fragrant.

3. Add the red bell pepper and stir for 2 minutes until the pepper is softened.

4. Stir in the chicken, and salt to taste. Simmer gently for 8 to 10 minutes till the chicken is cooked through.

5. Serve garnished with coriander leaves.

Serves 4.
