 Carrot Halwa.

Ingredients.

1.2 litres / 2 pints of milk.

225g / 8oz of carrots, finely grated.

75g / 3oz of butter.

1 tablespoon of golden syrup.

100g / 4oz of sugar.

50g / 2oz of raisins or sultanas.

1 teaspoon of cardamom seeds, crushed.

Method.

1. Place the milk and carrots in a heavy based pan and cook over a high heat, stirring occasionally, until the liquid has evaporated.

2. Add the butter, syrup, sugar and fruit. Stir until the butter and sugar have melted, then cook for 15 to 20 minutes, stirring frequently, until the mixture starts to leave the sides of the pan.

3. Pour into a shallow buttered dish and sread evenly. Sprinkle with the crushed cardamoms, cut into slices.

Serve warm or cold.
