Trinidad Beef Curry.

Ingredients

675 g / 1 1/2 lb of lean braising steak.

2 large onions.

2.5 cm / 1 inch piece of fresh ginger root.2 to 3 garlic cloves.

1 to 2 green chillies.

3 tablespoons of oil.

2 tablespoons of St Kitts curry powder.( Find the recipe for this curry powder on the West Indian curry paste page.)

600 ml / 1 pint of thin coconut milk.

Salt and pepper to taste.

Method.

1. Rinse the meat and cut off any excess fat and cut into 2.5 cm / 1 inch cubes.

2. Finely chop the onions, garlic and ginger, deseed and finely chop the chillies.

3. Heat the oil in a heavy based pan, add the chopped onion, garlic, ginger and chillies and stir fry until golden in colour.

4. Add the curry powder and continue to cook for another 5 minutes over a medium heat, take care not to burn the curry powder.

5. Add the meat and stirring continuously, cook until well browned and thoroughly coated in the spice mixture, add any seasoning to taste, and stir well.

6. Pour in the coconut milk, stir well and heat through, then reduce the heat, cover the pan and cook gently for 1 1/4 hours until the meat is tender.

Serve with plain boiled rice.
