West Indian Curry Recipes.
Tomatoes and Okra.
Ingredients.
450 g / 1 lb of okra.
2 medium onions.
1 green chilli.
2 ripe tomatoes.
1 garlic clove, peeled and crushed.
2 tablespoons of oil.
Salt to taste.
Method.
1. Wash and dry the okra, then trim off the stalks, Thinly slice the onions, deseed and chop the chillies and chop the tomatoes.
2. Heat the oil in a frying pan add the okra and fry until golden brown, drain and set aside.
3. Add the onion to the pan and fry until golden brown, add the garlic, chilli and salt, stir fry for a few minutes until all the moisture has evaporated.
4 Return the okra to the pan with the tomatoes and cook for another 4 to 5 minutes, stirring occasionally.
Serve with plain boiled rice or as an accompaniment to meat or poultry dishes.
