West Indian Pumpkin Curry.
Ingredients.
450 g / 1 lb of pumpkin.
1 medium onion.
1 garlic clove.
2 ripe tomatoes.
2 tablespoons of oil.
1 teaspoon of St. Kitts curry powder.
1 to 2 cloves.
1 teaspoon of lemon juice.
Chilli powder to taste.
Salt to taste.
Method.
1. Peel and cut the pumpkin into 2.5 cm / 1 inch pieces.
2. Finely slice the onion, peel and crush the garlic and chop the tomatoes.
3. Heat the oil in a frying pan, add the onion and stir fry until golden brown, add the garlic and curry powder and the chilli powder and salt to taste.
3. Add the cloves and lemon juice and stir fry for a a few seconds, then add the pumpkin and tomatoes, stir well, reduce the heat and cook stirring frequently, for about 15 to 20 minutes until the pumpkin and tomato are tender, add a few drops of water if necessary.
Serves 4.
