West Indian Curry Recipes.
Caribbean Prawn Curry.
This Prawn curry from Trinidad is similar to that found in India.
Ingredients.
2 medium onions.
2.5 cm / 1 inch piece of fresh ginger root, peeled.
1 garlic clove.
4 ripe tomatoes.
1 teaspoon of coriander seeds.
1 teaspoon of cumin seeds.
1 teaspoon of mustard seeds.
6 to 8 black peppercorns.
1 dried bay leaf.
2 to 3 tablespoons of oil.
1 tablespoon of lemon juice.
450 g / 1 lb of peeled king prawns.
Chilli powder to taste.
Salt to taste.
Method.
1. Finely chop the onions, ginger, garlic and tomatoes.
2. Grind the coriander, cumin and mustard seeds, peppercorns and bay leaf together into a fine powder.
3. Heat the oil in a heavy based pan, add the onion and stir fry until golden brown.
4. Add the ginger, garlic and ground spices and continue to cook for another few minutes before adding the chopped tomatoes and lemon juice. Season the curry to taste with the salt and chilli powder, stir well, reduce the heat, cover the pan and cook stirring occasionally, until the tomatoes are reduced to a pulp, add a little water if the sauce begins to dry out.
5. Add the prawns, stir well to coat them in sauce, then recover the pan and cook for another 5 to 10 minutes until the prawns are thoroughly cooked.
Transfer to a warm serving dish and serve immediately with rice or chapatis.
