Pork in Coconut Milk.

Ingredients.

2 onions, peeled and quartered.

8 dried red chillies.

6 macadamia nuts.

1/2 a teaspoon of dried shrimp paste.

2 tablespoons of vegetable oil.

750 g / 1 1/2 lb of lean pork, cut into 2.5 cm / 1 inch cubes.

250 ml / 8 floz of water.

1 teaspoon of salt.

250 ml / 8 floz of thick coconut milk.

1 tablespoon of sugar.

2 tablespoons of lime or lemon juice.

Method.

1. Put the onions, macadamia nuts, shrimp paste, chillies and 1 tablespoon of water in a blender and grind to a paste.

2. Heat the oil in a large saucepan and gently fry the paste, stirring constantly for 3 to 4 minutes. Add the pork and cook stirring, until it changes colour and is well coated with the paste.

3. Pour inthe water and add the salt, cover and simmer gently for about 30 minutes, until the pork is just tender.

4. Add the coconut milk and simmer uncovered for 10 to 15 minutes, stirring from time to time,then stir in the sugar and lime juice simmer for a few more minutes then serve.

Serves 4 to 6.
