Indonesian White Vegetable Curry.


Sajur Lemeng. White Vegetable Curry.

This dish is not strictly a vegetable curry as it does contain prawns and shrimp paste.

Ingredients.

450 g of mixed vegetables., eg marrow, aubergines, french beans or potato.

1 medium onion.

1 garlic clove.

3 to 4 macadamia nuts.

1/2 a teaspoon of shrimp paste.

2 teaspoons of ground coriander.

1/2 a teaspoon of chilli powder.

2 tablespoons of oil.

Salt to taste.

100 g / 4 oz of peeled prawns.

300 ml / 1/2 a pint of coconut thick coconut milk.

50 g / 2 oz of dessicated coconut.

Method.

1.Prepare the vegetables and cut them all into thin strips.

2. Roughly chop the onion, then grind to a paste with the garlic, nuts, shrimp paste, coriander, chilli powder and a little of the oil.(  The easiest method is to use a blender.)

3. Heat the remaining oil in a pan and add the ground onion mixture and stir fry until the mixture is well browned and the oil starts to separate out.

4. Add the salt and cook for a few more minutes, stir in the prawns, the vegetables and the coconut milk.

5. Moisten the dessicated coconut with a little water and add it to the pan.

6. Stir well and leave to simmer gently until the vegetables are cooked and the sauce has thickened.

Serve with plain boiled rice.
