Green Bean Sambal.

Ingredients.

2 tablespoons of vegetable oil.

4 shallots, thinly sliced.

2 garlic cloves, crushed.

1/4 of a teaspoon of shrimp paste.

250 g / 8 oz of french beans, topped ,tailed, and sliced thinly.

2 teaspoons of sambal oelek.(hot chilli sauce.)

1 teaspoon of soft brown sugar.

Salt.

Method.

1. Heat the oil in a frying pan, add the shallots, garlic and shrimp paste and fry over a low heat, stirring frequently for 5 minutes until the shallots are softened.

2. Add the beans, increase the heat to moderate and fry, stirring often for 8 minutes, until the beans are cooked but not too soft.

3. Stir in the sambal oelek, sugar and a little salt and continue frying the beans for another minute, taste and add more salt if liked.

Serve the sambal hot.

Serves 4.
