Burmese Beef and Potato Curry.


Ametha Net Aaloo Hin, Beef and Potato Curry.

Although this is traditionally a recipe for beef, lamb or mutton can be used instead. Other vegetables can be substituted for the potatoes.

Ingredients.

675 g / 1 1/2 lb of braising beef.

1 teaspoon of ground cumin.

1 teaspoon of ground coriander.

2 large onions.

A small bunch of fresh coriander leaves.

2.5 cm / 1 inch piece of fresh ginger root, peeled.

2 garlic cloves, peeled.

Chilli powder to taste.

3/4 of a teaspoon of turmeric.

4 tablespoons of oil.

350 g / 12 oz of potatoes, peeled and quartered.

Salt to taste.

600 ml / 1 pint of water.

Method.

1. Trim any excess fat from the meat and cut into 5 cm / 2 inch pieces. Sprinkle the ground cumin and coriander over the meat and rub in, then set aside to marinate for 1 to 2 hours.

2. Chop the onions then put into a blender with the coriander leaves, ginger, garlic, chilli powder and turmeric and a few drops of oil and blend to a smooth paste.

3. Heat the oil in a wok or heavy based frying pan, add the paste and stir fry until well browned.

4. Add the meat and stirring frequently fry until evenly browned and thoroughly coated in the paste.

5. Add the quartered potatoes and stir fry for another few minutes, then add the salt and water, stir well bring to the boil reduce the heat, cover the pan and cook gently for 50 to 60 minutes until the meat is tender.

Serve with boiled rice.
